Superfast Salmon with Wild Rice

A fantastically quick and nutritious supper in under ten minutes!

This is so easy.  It makes the most of the freezer and microwave to create a balanced, healthy bowl of tasty food that can be on the table in super quick time. With no mess and very little washing up!


  • 1 pack BigFish Salmon Fillets

    we used our Eastern Thai fillets for this recipe but feel free to experiment with our other flavours

  • 1 pack microwave rice

    we used Tilda Brown Steamed and Basmati Rice (many other varieties are available!)

  • 1 cup peas

    fresh or frozen

  • A few spring onions

    thinly sliced

  • One red chilli

    finely chopped

  • Fresh limes

    to serve

  • Omega 3 oil

    eg. Udo's Choice Ultimate seed oil  (others are available) or you could use a nice peppery olive oil.


  • 1.

    This is so simple - follow the pack instructions to microwave the salmon from frozen (four minutes)

    Cook the rice as per the pack instructions (two minutes)

  • 3.

    If you’re using frozen peas, cook first (steam, boil or microwave). 

    Stir the peas into the cooked rice along with the red chilli and spring onions.

  • 4.

    Divide the rice between two warmed bowls, put a fillet of salmon on top of each and then finally drizzle with a little oil and add a generous squeeze of fresh lime juice
