Piri Piri Salmon Burger
A spicy taste sensation and perfect for National Burger Day on 22 August!
This quick and easy salmon burger makes a great alternative to meaty burgers, and being rich in Omega3 is a bit healthier too!
Ingredients

BigFish Brand Piri Piri Salmon fillets

small tub of prepared tzatziki

OR make fresh tzatziki:
300g of good Greek yoghurt; half a clove of garlic, finely chopped; half a cucumber, roughly chopped with the core (seeds) removed; half the juice of one lemon; fresh mint, roughly chopped

Bread rolls - ciabatta is good, or a nice, large wholegrain roll

Salsa to serve
half a lime, juiced; half a cucumber; a freshly grated carrot; one tomato, diced; a quarter of a red onion, finely diced; fresh parsley
Method

Remove all packaging from the salmon fillets and loosely wrap in lightly oiled foil. Cook in the oven for 35-40 minutes.
OR follow the instructions on pack to microwave cook.

Put the yoghurt, garlic, cucumber, lemon juice and mint in a bowl with a good shake of salt and pepper. Mix to combine. Pop in an airtight container and place in the fridge until ready to use.

Place the cucumber, carrot, red onion and tomato in a bowl and stir together with the lime juice. Leave to one side until ready to serve.

Slice the bread rolls and put a cooked salmon fillet in each. Top with tzatziki and salsa (or serve the salsa on the side).
Garnish with parsley and enjoy!
