Salmon Sushi Pumpkins

We just loved re-creating this clever temara sushi idea, it’s pretty straightforward to do.

Just allow a little time to do the decoration and you’ll have a real talking point for your Halloween party!  With thanks to Japan Centre for the idea.


  • 1 pack BigFish Smoked Salmon

    or Sea Trout

  • 250g cooked Japanese rice
  • 1 tbsp sushi vinegar
  • Nori seafood sheets
  • wasabi paste
  • soy sauce and pickled ginger

    to serve

    Cook the sushi rice according to the pack instructions. Allow it to cool slightly then stir in the sushi vinegar.

    Prepare a plate or serving board for your sushi, we arranged sheets of Nori seaweed on ours to make a nice dark background for our sushi ‘pumpkins’

    Now take a sheet of clingfilm.Lay a slice of salmon in the centre, put a tablespoon of rice on top and pull the film tight, twisting to make a ball with the rice.Carefully remove the ball of salmon and rice and place on your prepared serving dish.To help stop the rice sticking to your hands, try dampening your fingers.

    Repeat to use all the rice and salmon.

    Now decorate your sushi with cut pieces of seaweed sheet to make faces for your pumpkins. As a final touch, pipe some wasabi paste decorations on the plate – try creating with spiders webs, witches hats or anything else suitably spooky!
