A super-quick way to put together a wholesome midweek meal with the bare minimum of preparation, this is particularly good if you’re following a low-carb diet.
You can of course mix it up by choosing different BigFish marinade flavours or find your own combo with different prepared steamed vegetable mixes. We particularly like this one from Waitrose.
- 2 BigFish salmon fillets with Eastern Thai marinade
1x 300g bag prepared microwave veg
eg. Waitrose Wheatberries, Lentils & Green Vegetables
Remove your salmon fillets from the freezer, take off the outer packaging. Pierce a hole in each individual vacuum pack, pop the fillets on a microwaveable plate and cook on full power for 5-8 minutes from frozen. Check half-way through as the cooking time for two fillets will vary depending on their size and shape.
Allow the fillets to stand while you cook the veggies according to the pack instructions.
Serve your veggies in warmed bowls with the salmon fillet on top. Alternatively, you can remove the skin of the salmon fillets and flake the fish into the vegetables, stirring to mix through.
Eat immediately or leave to cool and then chill in the fridge – this is also great cold the next day as a lunch dish!
