This week is National Picnic Week, a perfect excuse to enjoy some of our lovely smoked salmon and smoked sea trout!
Summer is here and as the weather warms up, we always look forward to more occasions to enjoy smoked fish. It's such a fresh, healthy and delicious ingredient for picnic food - in sandwiches made with slices of soft wholemeal or granary bread, maybe adding some cucumber (as is traditional!). Or you could be daring and whizz up some of Lou's favourite - horseradish mayonnaise! It's absolutely wonderful with smoked fish, just stir a teaspoonful of horseradish sauce into your usual mayonnaise and spread generously in your sandwich.
Another popular lunchbox or picnic choice with our BigFish team are these Smoked Salmon & Dill Cupcakes, tasty little morsels that could really make your picnic stand out from the crowd! Or this Healthy Smoked Salmon Hummus, it's so easy to make, just add a boxful of lovely crisp raw vegetables and share with friends.
